Post up some good recipes here.
Stir Fried Green Beans wrote:1-2 lbs. fresh green beans
soy sauce
sesame seeds
butter

Wash and remove ends from the beans. I use a wok but a large frying pan may also be used. Heat pan on medium-high. Add 1-2 tablespoons of butter in pan and add the green beans. Splash soy sauce to coat beans. Stir continuously. Add sesame seeds and cook for 7-10 minutes.
BAR-B-Q SWORDFISH STEAKS wrote:1/4 c. olive oil
1/4 c. dry sherry
2 tbsp. soy sauce
1 tsp. Worcestershire sauce
1 tsp. garlic powder
1/8 tsp. pepper

Mix well. Allow one steak per person. Baste steak with marinade and put basted side down on grill. Keep basting while grilling. Before turning, baste top side with marinade. Cook for about 5 minutes on a side or until fish flakes with a fork.

carrot cake:

1 1/4 c vegetable oil (gonna try 3/4c oil, 1/2c applesauce next time)
4 eggs
1 c dark brown sugar
1 c granulated (white) sugar
1 tbsp vanilla extract
1/2 tsp salt
2 tsp baking soda
2 tsp baking powder
1 tbsp cinnamon
2 c flour
3 c grated (fresh) carrots
1 c chopped pecans (optional)

Preheat 350. Get out the butter and cream cheese from below frosting recipe and let it sit out to come to room temperature. Grease/flour a 9 x 13 or 2 9" cake pans. Blend eggs & oil/applesauce. Add sugar & blend. Add salt, soda, powder, cinnamon & blend. Add flour 1 c at a time, mixing in between. Toss carrots and nuts in if desired. Bake in center of over around 40 minutes. Toothpick test it. Cool completely.

1/2 c butter, softened
8 oz cream cheese, softened
4 c confectioners (powdered) ugar
1-2 tsp vanilla extract
1 c chopped pecans (also optional, and we don't play dat here)

Beat the butter & cream cheese until blended and nice and creamy. Add sugar a cup at a time and finish with the vanilla extract. Here's where you'd stir in the pecans if so inclined. There's enough here to frost it i done as a cake with the 2 9" pans for sure.

Texas Chocolate Cake

2 c flour
2 c sugar
1 tsp baking soda
1 c margarine (2 sticks)
1 c water
4 tbsp cocoa (Hershey's works great, but Ghiardelli is the best)
2 tsp vinegar + milk to equal 1/2 cup
2 eggs, beaten
2 tsp vanilla

Preheat 350'. Grease & flour a jelly roll pan. Mix flour, sugar, soda in mixing bowl. In a 4 cup measuring cup (or similar), melt margarine. Add water & cocoa to margarine, bring just to a boil in microwave. Beat eggs & vanilla in small bowl. Add wet ingredients to dry in order above, do not overbeat. Bake 25-30 minutes or until toothpick test says it's done. If your oven's not level (and who's is?), rotate the cake at about 7-10 minutes to make sure it bakes level.

Frosting

1 box (4 c) powdered sugar
1/2 c margarine (1 stick)
5-6 tbsp milk
3 tbsp cocoa
1 tsp vanilla
1 c chopped pecans

Combine margaring, milk and cocoa, bring just to a boil in microwave. Add to sugar in mixer. When blended, stir in vanilla and nuts. It's best to spread this on the cake while the frosting (not necessarily the cake, but that's OK too) is warm.

Serves 1 - 24 (cutting it 4 x 6 yields a pretty good sized piece). Absolutely amazing if it's heated and seved with vanilla ice cream.
